1-2 tablespoons extra-virgin olive oil
1 medium/ large onion, chopped
2 teaspoons curry powder
1⁄2 teaspoon ground cumin
1 tablespoon tomato paste
1 garlic clove, chopped
6 cups water
1 1⁄2 cups red lentils
sorted, checked, and rinsed well in a strainer
1-2 tablespoons fresh lemon juice
Pinch cayenne (optional)
Salt and pepper to taste
